I will be making this while liking Jeremy Corbyn tweets, humming Billy Bragg songs and bragging about the city of Liverpool that I left nearly thirteen years ago but have no plans to return to - all in memory of the boldest, biggest character that welcomed me into the Clarke family.
Lobscouse is one of the most traditional stews, particularly beloved of the Scousers and North Walians. It gets better the longer it's in the pan and should be served with buttered, crusty bread and pickled red cabbage (or beetroot at a push, like stovies). Poor Nigella Lawson - she was criticized for her simplified and cooked Caesar Salad recipe. I don't see a problem with it myself - cooked lettuce isn't anything new and it's certainly a novel way of presenting a salad. It left me wondering what is wrong with simple recipes? Do we really want to cook like a chef every day? Pfft, sometimes beans on toast is the way forward. Here's a few of Street Food Sat Down's favourite super swift suppers (although sometimes breakfast and lunch too): There is one curry that causes unnecessary excitement and overuse of a word in SFSD-land. Curried goat. If it is being prepared, it dominates conversation and the anticipation can get a little tense. We have Conwy Goat Meat to thank for the weekend's goat madness - we saw a tweet about them stocking the Spar in Llanfairfechan (about 13 miles from SFSD HQ on Anglesey) and ignored the amber weather warning in force to go across the bridge with the intention of buying whatever we could find. Good goat is hard to find but thankfully, we got the last pack in the store. Spoiler alert: This is another open love letter to Netherton Foundry pans with a happy ending and some bragging. |
